
While in Nashville a couple of weeks ago, Lucie and Kurt took us to the Mexican popsicle stand where the serve these really yummy paletas. We liked them so well that we tried our own yesterday. The combo sounds strange, but it really was refreshing.
Cucumber Chili Paletas
1 peeled cucumber
1 seeded jalapeno
1/3 c fresh lemon juice
2/3 c sugar
Blend together in blender. Pour into popsicle molds and freeze at least 3 hours.
